Carrot Cake Cupcake

Carrot cake made with crushed pineapple and applesauce makes for a super moist cupcake! Topped off with my favorite fluffy cream cheese icing, sprinkled walnuts and an icing carrot. I love this cupcake! And, it's made with canola oil (less fat than butter), crushed pineapple, unsweetened applesauce and carrots....hmmm....that's got to count for something, right?
